Chilli Chicken Couscous

225g/8oz couscous1 litre/1¼ pint boiling water5ml/1tsp olive oil400g/14oz chicken without skin and bone, diced1 yellow pepper, seeded and sliced2 courgettes, sliced thickly1 small green chilli, thinly sliced or 5ml/1 tsp chilli sauce1 large tomato, diced425g/15oz can chick peas, drainedSalt and black pepperCoriander or parsley sprigs to garnish
1. Place couscous in a large bowl and pour over boiling water. Cover and leave to stand for 30 minutes.
2. Heat the oil in a large, non stick pan and stir fry the chicken quickly to seal, then reduce the heat.
3. Stir in the pepper, courgettes and chilli or sauce and cook for 10 minutes, until the vegetables are softened.
4. Stir in the tomato and the chick peas then add the couscous. Adjust the seasoning and stir over a moderate heat until hot. Serve garnished with fresh coriander or parsley.
