Spinach & Sundried Tomato Pasta

Ingredients
4 oz. Barilla whole Grain Rotini2 servings Great Lakes Sundried Tomatoes, chopped1 cup fat free milk4 cloves garlic, minced1 tbsp butter1 tbsp whole wheat pastry flour4 tsp parmesan cheese2 cups chopped fresh spinachsalt and white pepper to taste
Directions
Boil and drain pasta. While pasta is cooking melt butter in pan, saute garlic for about 2 minutes. Add flour and whisk quickly for about 30-60 seconds. Add milk slowly while stirring. Add tomatoes, cheese and spinach and simmer for 3 to 4 minutes. Add sauce to pasta and serve.
