1 1/4 cup Lentils, dried (approx. 1/2 of a 16oz. Bag)1 c. Onions, chopped1/2 tsp. Black pepper1 tsp. Turmeric1 tsp. Ginger paste4 tsp. Garlic paste1 1/2 c. Cauliflower, chopped1 c. Green beans, fresh1 can. Tomatoes, diced, undrained (approx. 1 3/4 c.)1 tsp. Cilantro, dried or 1 Tbsp. fresh2 Tbsp. Sour cream, fat free
Heat onion, ginger, cumin, turmeric, pepper and garlic in a pan with approximately 1/8 of an inch of water. Simmer for 2 minutes. Add cauliflower, green beans and tomatoes with juice from can. Simmer for 1 minute. Add water and lentils. Bring to a boil. Cover, reduce heat and simmer for 35-40 minutes or until lentils are tender. Stir in cilantro and sour cream.
