Penne pasta with Chicken in Sun-Dried tomato Tarragon Cream Sauce

Ingredients
Directions
1 Box of Multi grain penne pasta 4 Chicken breast2 Tablespoons of olive oil2 Shallots2 Tablespoons of Fresh tarragon Chopped1 Cup of light Whipping Cream1 Bag of Sun Dried tomatoes
Cook Pasta as per directions on box
Meanwhile
In a Skillet pour 1 tablespoon of olive oil and add Chicken. Pan fry until nice brown color
In another skillet pour the other tablespoon of Olive Oil and add Shallots, Tarragon and Sun dried Tomatoes. Cook for 3 minutes or until shallots are lightly browned. Once done add the shallots, tarragon and sun-dried tomatoes in the pan with the chicken and add the cream. Cook on Medium until cream thickens.
Drain Pasta and mix all ingredients together
