1 cup Couscous (I used french couscous, but any will do) 1/4 cup Golden Raisins3 tbsp capers1/5 cup parsley12 grape tomatoes1/2 cup cucumbers chopped2.5 tbsp extra virgin olive oil1/2 cup scallionslemon and sea salt to taste
Cook the couscous according to instructions. Let cool and fluff. The rest of the salad is solely to taste. Add as much or as little as you like of anything. This is a "kitchen sink" salad, so throw anything in: chickpeas, cashews, carrots, anything! But remember it will change the nutrition values.
**Warning: the capers very salty and you need little if any added salt. I'm a salt-fiend so I added just a quarter tablespoon of sea-salt for taste.
