10 oz whole wheat spaghetti2 cloves of garlic, minced5 fresh basil leaves, shredded20 cherry tomatoes, halved and then crushed1 cup fresh spinach, chopped3 tbsp extra virgin olive oil3 tbsp red wine or balsamic vinegar (whatever your preference)salt (to taste)freshly ground pepper (to taste)
Cook and drain pasta. Do not overcook or your salad will be mushy as the pasta absorbs the vinegar and olive oil dressing. Rinse the pasta in cold water, drain well and place in a large bowl. Add all the other ingredients and mix well. Cover bowl with saran wrap and refrigerate. Allow salad to marinate for at least 1 hour in the fridge for flavors to blend.
