brown rice pasta with cabbage, bacon and fresh mozzarella

Ingredients
8 oz of fresh mozzarella cheese4 tablespoons parmesan cheese16 oz. brown rice pasta fusilli Trader Joe's or any pasta you like3-4 c. of sliced savoy cabbage8 pieces of bacon cooked crisp2-3 cloves of garlic3 tablespoons fresh thymesalt and pepper to taste
Directions
cut bacon into 1 inch pieces and fry
add 1 tbls olive oil to pan and add cut up cabbage ( cut cabbage into thin strips) toss in pan, add salt and pepper and fresh thyme and garlic, cover and cook on medium heat for 15-20 minutes stirring frequently)
Cook pasta according to directions
Add 2 tbls. olive oil to pan with cabbage stir and then add pasta and cheeses continue cooking on low in pan stirring frequently until cheese is melted

Serving Size: makes 8 servings
