Turkey and Portobello Lasagna Roll Ups

Ingredients
Ingredients:Honeysuckle lean turkey italian sausage, 16 ozCottage Cheese, Nonfat, 9 oz Pasta, Lasagna Noodles, 9 noodlesOnions, raw, 1 large6 oz Portabella MushroomsBasil, 1 tbsp Pepper, black, 1 tsp Oregano, ground, 1 tbsp Cilantro, dried, 1 tbsp Red Wine, 2 fl oz 2 cans Hunts Garlic and Herb pasta sauceSargento 6 Italian Cheese, 6 ozSargento Mozzarella and Smoked Provolone shredded cheese 6 ozGarlic, 6 cloves (remove)
Directions
Boil Lasagna noodle per package instructions. Salt the water. When lasagna is done run under cold water.

Remove Italian Turkey from casings and brown meat in a skillet. Add cilantro, black pepper, oregano, 3 clove garlic, and basil to ground turkey. It helps season the turkey since it tends to be rather bland.

In a sauce pan add Chopped Onion, diced Portobella mushrooms, and garlic w/ 2 oz of Merlot (red wine). Add water to keep it from sticking. Cook until onions are translucent.

Preheat over to 400

In an extra-large pan add some pasta sauce to the bottom of the pan.

On a clean surface lay out a lasagna noodle. In equal parts add a little sauce, cottage cheese, sauted onions and portobello, turkey sausage, and sgredded cheese. Roll noodle (2 folds so there are 3 layers). Lay in lasagna pan. If the filling falls out you can scoop it up and stuff it under the first layer of noodle in the pan.

Repeat for the other 8 noodles.

When all 9 noodles are in the pan add the additional sauce over the roll ups and top with Mozzarella and Smoked Provolone cheese.

Bake for 40-45 minutes until top is a nice golden brown.
Allow it to rest about 15 minutes and serve.
