salmon quesadillas

Ingredients
3 cloves garlic, minced1 tsp. olive oil1 can (14.75 oz.) salmon1-2 tsp. dried basil, or 1 T. fresh, chopped1/2 tsp. black pepper6 flour tortillas2 c. shredded part-skim mozzerella cheeseoptional toppings: salsa, guacamole, sour cream, lettuce
Directions
Saute garlic in oil until tender. Stir in salmon, basil and pepper. Cook til heated through (1-2 min.). Lay out the 6 tortillas, divide the cheese between all, and divide salmon mixture on each. Fold in half and cook with one of the methods: Quesidilla Maker or George Forman Grill 1-2 min., frying pan 1-2 min./ side, or electric griddle 1-2 min./ side. I keep warm by placing in a 200 degree oven until all are cooked, and serve, with optional toppings.
