Cabbage salad with asian ginger dressing

1 head of red cabbage, 5 tbsp vegetable or low sodium chicken broth, 3 cloves garlic, 3 tbsp extra virgin olive oil, 2 tbsp grated ginger, 1 tbsp honey, 1 tbsp mirin, 1 tbsp soy sauce
Cut cabbage head into quarters and then slice in about 1/4 inch strips.
Heat broth over medium heat in a large skillet until it starts to steam.
Add the cabbage and cover for about 10 mins (until tender).
In a separate bowl while the cabbage is steaming, mince 3 cloves of garlic, and add 3 tbsp olive oil, 2 tbsp grated ginger, 1 tbsp honey, 1 tbsp mirin, 1 tbsp soy sauce.
Whisk together.
Remove cabbage from heat.
Pour dressing over warm cabbage and toss to combine.
Can be served warm or cold.
Serving Size: makes 4 to 6 servings
