Roasted "surprise" mashed potatoes

Ingredients
1 lg head cauliflower1/2 c coconut milk4tbsp real buttersalt and pepper garlic powder1 tbsp coconut oil
Directions
preheat oven to 350F
cut up cauliflower and remove leaves/stem
in large bowl, toss cauliflower florets, coconut oil, and seasonings until well coated.
transfer cauliflower florets to greased cookie sheet
cook @ 350F for appx 20 minutes

Remove from oven, place in large food processor.
While on, add coconut milk slowly, then add garlic powder and butter. Pulse for appx 30 sec, or until consistency of mashed potatoes is reached. Enjoy!
