Purple Hull Pea Salad

Ingredients
1 1/2 cups purple hull peas2 tsp dijon mustard1 tbsp olive oil1 tsp balsamic vinegarsea salt and paper to tasteparsley and cilantro to tastelemon juice to taste
Directions
Cook peas for about 30 minutes (al dente)
Mix mustard, olive oil, herbs, salt/pepper, lemon juice in bowl. Add cooled peas to mixture and toss.
