1 Cup Raisins2 oz. Amaretto Liquor1 1/2 Cups Oat Flour1/2 Cup Oat Bran1/4 Cup Splenda Brown Sugar1 tsp. Ground Cinnamon1 tsp. Baking Powder1/2 tsp. Baking Soda1/2 tsp. Salt1/2 Cup Unsweetened Applesauce1/2 Cup Zuchinni Pulp (with skin)1 Large Egg2 Large Egg Whites2 Tbsp. Olive Oil
(Soak 1 cup of raisins in 2 oz. amaretto liquor for about 4 hours or longer.) In a large mixing bowl thoroughly blend together dry ingredients. In a smaller mixing bowl, thoroughly mix together liquid ingredients including applesauce and zuchinni pulp. Combine the contents of the liquid mixture to the larger bowl of dry ingredients. Stir until all the dry ingredients have become moistened. Fold in the raisin and amaretto mixture. Lightly grease or line muffin tins with paper cups. Evenly distribute batter into the 12 cups. Bake at 400 degrees for 15 minutes or until toothpick comes out cleanly when tested.
