Pear Ginger Muffins

1/2 cup white granulated sugar1 cup brown sugar, packed3 eggs1 cup unsweetened applesauce2 tsp vanilla extract2 cups flour1 tsp baking powder1 tsp baking soda1 tsp salt2 medium pears, peeled and diced2 tbsp minced fresh ginger
1. Preheat oven to 350F. Whisk eggs together. Add sugars, vanilla and applesauce and whisk together until mixed.
2. In a separate bowl, whisk together flour, baking powder, baking soda and salt. Add to wet mixture and mix with spatula until just mixed.
3. Fold in fresh pear and ginger. Pour batter evenly in muffin tin lined with paper cups.
4. Bake for 20-25 minutes, or until tops are golden brown and tops bounce back when pressed on. Allow to cool completely. Will keep about 1 week in fridge.
