Wilted Spinach Salad with Bacon

Ingredients
1 slice bacon3 cups fresh spinach2 teaspoons olive oil1 teaspoon balsamic vinegar1/3 teaspoon honey1 hard boiled egg1 tablespoon chopped red onion
Directions
1. Place the bacon slice between paper towels, put on a plate, and cook on high in the microwave for 2 minutes, or until crisp. Set aside to drain.

2. Place the spinach leaves and hard-boiled egg in a large serving bowl.

3. Warm the oil in a skillet over medium heat. Add the vinegar, honey, and onion and stir to combine. Immediately pour this over the spinach, crumble bacon into salad, toss gently, and serve at once.
