Cherry Pie, Fresh Sweet Cherries

Ingredients
2 - 9" pie crusts (Pillsbury)8 cups sweet cherries3/4 cup Splenda (or other sugar substitute)3 tablespoons flourpinch saltdash ground cinnamon1 tsp vanilla extract1 tsp almond extract1 egg (for egg wash on crust)1 tbsp for dusting top crust
Directions
Spray deep 9" pie pan; unroll pie crust and gently fit into pie pan - set aside. Mix sugar substitute, flour, cinnamon, vanilla extract, almond extract and toss with cherries mixing well. Pour into pie shell. Top with second pie crust, press two crusts together, cut vents into top center of crust. Brush crust with egg wash and dust with sugar substitute. Preheat oven to 400 degrees. Bake for a total of 40 minutes. For the first 15 - 20 minutes, cover edges; uncover and bake remaining 20 - 35 minutes. NOTE: prep time does not include pitting cherries.
