Mexican white bean medley

Ingredients
small white navy beans, 1 cup or one can -- rinsed wellCarrots 1/2 cup chopped roughly Onion 1/2 cup diced Pepper- sweet/ hot pepper such as pepperoncini 1/4 cup chopped Pepper- Pablano 1/2cup chopped in large rough piecestomato- one med sized fresh tomato choppedCilantro- 1 tbsp choppedItalian Parsley 1/4 cup choppedBasil- 1 tbsp chopped1 tsp ground pepper, and cumin seed (ground cumin can be used as well, just reduce to 1/2 tsp)1/2 tsp garlic salt1 cup Chicken stock (or may substitute white wine or even water for stock)
Directions
saute onion, sweet/spicy pepper in a non-stick pan over med low head. once the onion is beginning to brown, add all remaining ingredients and reduce to a simmer. continue to simmer, gently stirring until all moisture is absorbed. serve as a side dish or as a wonderfully flavorful meatless meal.

Serving Size: makes 6 servings for a side dish or will feed 3 as a main meatless dish.
