1 cucumber sliced1 tomato sliced8 slices whole wheat bread3Tbsp mayo (I used whole fat in the calculations, you can use lowfat if you like)salt and pepper (not in calculations)
Place mayo on 4 slices of bread, top with cucumbers, tomatoes and salt and pepper (if you want)
Enjoy.
You could also toast the bread to make it crunchy just like the cucumbers.
