Pecan-Crusted Chicken Fingers

1 large egg1 tsp lemon juice1 tsp cornstarch1 cup breadcrumbs1 cup very finely chopped pecans3/4 tsp salt1/2 tsp dried oregano1/2 tsp dried thyme1/2 tsp paprika1/4 tsp ground red pepper(optional)1/4 tsp ground black pepper1 pound chicken breast tenders2 tbsp extra light olive oil for sauteeing
1) Combine 1st 3 ingredients in a shallow dish such as a pie plate; stir well. Combine breadcrumbs & next 7 ingredients in another shallow dish.
2) Dip chicken tenders in egg mixture, then dredge in breadcrumb mixture, pressing firmly to coat.
3) Heat olive oil in a large skillet over medium high heat. Sautee chicken tenders until well browned on both sides, & no longer pink in the middle.
4) Serve with honey mustard or favorite dipping sauce.
Serving Size: Approx. 2 tenders per serving
