Barley and Veggie Stew

2 Tsp. Olive Oil1 Cup Chopped Onions3 Cloves Chopped Garlic1 Cup Chopped Zucchini1 Cup Sliced Carrots2 Cups Sliced Mushrooms (Any Type)1/2 Cup Pearled Barley (Dry)3 Cup Water1 15 oz. Can Diced Tomatoes1 Tsp. Each- Salt, Pepper and Ground Ginger
In a large saucepan over medium heat combine olive oil, garlic and onions. Cook until onions are soft, be careful not to burn onions and garlic. Add the carrots and zucchini cook for about 5 minutes until carrots and zucchini are tender crisp. Add mushrooms and cook for a 2 minutes stirring frequently. Add the rest of the ingredients, stir well, bring to a boil then reduce heat to simmer and cook for about 45 minutes, or until barley is done.
