4 portobello mushrooms sliced into thick slices1 large onion sliced thin2 bell peppers seeded and sliced thin12 corn or WW tortillasGuacamole Salsa whatever you like best mild to hot3 C cooked brown rice ( I usually use less per serving)
Cook mushrooms in a large nonstick skillet on high heat for 3 min or until mushrooms begin to btown slightly. Add the onion to the skillet and continue to cook another 5 min. Warm the toritllas.
To serve spoon the mushroom mixture into the tortillas with guacamole and salsa to garnish. Serve with a side of rice and beans.
