Yummy Low Fat Zucchini Muffins

Ingredients
2 and 1/2 cups grated zucchini1 and 1/2 cups unsweetened applesauce3/4 cup liquid egg white product2 tsp vanilla extract1 cup packed brown sugar3 cups whole wheat flour1/2 cup ground flaxseed meal3 tsp ground cinnamon1 tsp baking soda1 tsp salt1/4 tsp baking powder1 cup chopped pecans or walnuts
Directions
Mix zucchini, applesauce, egg whites, vanilla and sugar in large bowl until combined. Add flour, flaxseed meal, cinnamon, baking soda, salt, and baking powder. Stir in nuts. Pour into 2 paper-lined or sprayed 12-cup muffin tins or 2 greased loaf pans. Bake at 350 for 20-25 minutes for muffins, 45-60 minutes for loaves, or until a toothpick inserted in the center comes out clean.

Serving Size: Makes 24 muffins or 2 loaves cut into 12 slices each
