5 medium red potatoes, cut into 1" pieces1 1/2 cups sliced Portabello Mushrooms2 tbsp olive oilThyme to tasteOnion powder to tasteGarlic powder to tasteBlack pepper to tasteSalt to tasteOregano to TasteHerbes de Provence to taste
Preheat oven to 350. Slice potatoes and mushrooms. Place in medium bowl and toss with oil and herbs. Place on a slightly greased cookie sheet and roast for 30 minutes, or until golden. YUM. Makes 3 one-cup servings.
