Mock Mashed Potatoes

Ingredients
1 Medium head Cauliflower, cleaned & steamed3 tbsp Country Crock Light Shedd Spread2 tbsp Milk 2%Mrs. Dash Seasoning to taste
Directions
Clean head of cauliflower and steam until soft. Mash cauliflower, add butter, milk, and seasoning. Put in pan on stove and simmer until excess moisture is evaporated.

    I've made this before using garlic salt. Also, I usually use frozen cauliflower because it cuts down on prep time and I usually have it on hand. But if I do that, I don't use milk because it gets too liquidy. - 12/2/07
