Spicy cajun chicken with white rice

Ingredients
3 cups water1 1/2 cups rice2 lbs bonesless skinless chicken (diced)2 T oil1 cup celery (diced)1 cup onion (diced)1/2 cup bell pepper (diced)2 cups stewed tomatoes1t garlic salt2t cajun seasoning
Directions
In 2 Qt pan add water and bring to boil. Add rice and stir. Cover and simmer on very low heat for 20 minutes. Set aside.

Heat skillet and add oil. Then add chicken that is seasoned with a little of the garlic salt. Cook until about done, then add celery, onion, and bell pepper. cook until almost done. Add Stewed tomatoes and remaining seasonings. Simmer for 10 minutes and then add rice and mix well. Serv
