Hearty Tomato-Lentil-Barley Soup

Ingredients
2 tbl olive oil2 celery stalks, chopped2 carrots, chopped1 medium onion, chopped6 cups water2 beef boillon cubes 3/4 cup lentils1/4 cup barley1 - 28 oz can of chopped tomatoes1 tsp minced garlic1/4 tsp peppersalt if desired1 bay leaf
Directions
Sautee celery, onions, carrots in olive oil for a few mins. Add water, boillon, lentils and barley and cook for 15 minutes. Add tomatoes seasonings, and bay leaf, bring to a boil then turn down heat and simmer for about 60 minutes. Remove
bay leaf before serving.
