Skinny Chicken Fettuccine Alfredo Sauce

Ingredients
1/2 C Brummel and Brown Spread2 Tbsp flour3 Tbsp reduced fat cream cheese 12 oz can evaporated milk, fat free1/2 C nonfat milk2 cloves garlic, pressed black pepper to taste2/3 C parmesan cheese, shredded 6 oz chicken, cooked and diced into small pieces12 oz (dry weight) fettucine noodles, cooked according to pkg instructions
Directions
In a large pan at medium heat, melt Brummel and Brown, along with the garlic. Using a whisk, add flour and saute for a few minutes to make a roux. Add cream cheese. When the cheese has melted and the mixture begins to thicken slightly, add nonfat milk. When mixture begins to thicken, add evaporated milk. Continue to cook, stirring constantly until thickened and bubbly. Season with pepper.

Remove from heat and stir in diced chicken and parmesan cheese.

Pour over prepared fettucine noodles, and stir with large spoon or spatula to coat.
