Southwest Egg White Omelet

Ingredients
Chopped Green Yellow or Red Pepper2 Egg Whites1 Slice Pepperjack cheese2 tbsp of Mild salsa (or medium or hot if you prefer)
Directions
Chop Peppers into small pieces,
Add two egg whites to small frying pan over medium heat
As eggs start to cook, add peppers and salsa
Flip omelet when ready and cook briefly on side as you add cheese, then fold over and serve as cheese melts.

Serving Size: Makes 1 healthy Omelet, or srambled eggs
