22 ounces LeanGround beef1 cup diced carrots1 cup diced celery1 medium diced onion1 garlic clove1 Tablespoon dried parsley2 teaspoons dried thyme14 ounces tomato juice1 10 ounce can of canned tomatoes2 cups frozen mixed vegetables4 cups of water
Saute ground beef in a Pam sprpayed skillet, then add chopped onion, carrot, celery, garlic 3-4 minutes until soft. Add thyme and parsley. Meanwhile pour water, tomato juice, diced tomatoes, frozen vegetables, drained corn into crock pot. Add beef skillet ingredients. Cook on low for 6-8 hours, high for 3-4 hours. Alternatively simmer in a pot on the stove for 30-60 minutes.
