Acerola Pudding

Ingredients
1 cup Acerola cherries4 T Albumin Or 4 egg whites3 T powdered Apple Fiber1/2 c sugar1/2t vanilla extract
Directions
Put washed acerola cherries in blender, cover with water and blend well. Strain into large saucepan, rinsing into pan with 2 c. water. Stir in other ingredients. Continue stirring over low flame until bubbling; stir for 5 minutes more. Allow to cool some then pour into glass bowl or 3 large custard cups. Refrigerate until serve. Can top with cinnamon or whipped topping.
