Blueberry Microwave Muffin

Ingredients
1/4 cup quick oats1/4 cup blueberries1 large eggstevia to taste
Directions
Take a little less than a quarter cup of quick oats, 1 egg, a small handful of blueberries, and some brown sugar or Stevia if you like things sweet, and mix it all up in a coffee mug. If you want your muffin a little moist a tablespoon of plain soymilk or almond milk will do it.

Then place in the microwave for 1 min. Watch it carefully! This could overflow!

If the muffin top does not look firm, place back in 30 sec at a time.

Once ready, flip mug upside down onto a plate and slice some fresh strawberries to decorate.

    whoops! I actually messed that up--it's supposed to be 1/4 cup dry oats.

    This recipe is not my favorite internet recipe ever...
    It's pretty dry, and I even added a splash of almond milk. A few suggestions if you must try it: do NOT use traditional oats, they are much tougher than quick oats; definitely eat it with sliced strawberries; and be sure to not overcook it!! - 6/13/13

    It was ok. I was so excited to try it because of the simplicity, but... it tasted like blueberry oat scrambled egg cake. It wasn't bad, but for 160 calories, I can do better. - 10/21/11
