Easy Gazpacho

Ingredients
1 1/2 cups peeled, seeded cucumber, chopped1 cup onion, chopped1 bell pepper, chopped6 tablespoons white wine vinegar1 tablespoon extra virgin olive oil1/2 teaspoon kosher salt1/4 teaspoon fresh ground black pepper1 clove garlic, minced2 pounds tomatoes, chopped1/2 jalapeno, choppedjuice of 1 lime1/4 cup fresh cilantro
Directions
Combine ingredients. Place one-third of vegetable mixture in a food processor; process until smooth. Pour puréed vegetable mixture into a large bowl. Repeat procedure with remaining vegetable mixture. Cover and chill for at least 2 hours.
