1.5 C oatmeal1.5 ml liquid stevia1 tsp baking powder0.5 tsp baking soda0.5 tsp salt2 tsp ground cinnamon0.25 tsp ground nutmeg2 egg whites350 g ripe bananas, mashed0.25 C applesauce
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
3. In a large bowl, stir together flour, baking powder, baking soda, salt cinnamon and nutmeg.
4. Whisk egg whites slightly, add stevia, bananas and applesauce; stir just until combined. Add dry ingredients to wet ones. Pour batter into prepared pan.
5. Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.
