Lasagna Roll Ups (Chicken & Spinach)

Ingredients
3 Healthy Harvest Whole Wheat Blend Lasagna Noodles (2.5 oz dry noodles)1/2 cup low fat cottage cheese (about 90 cals)1/2 cup Bird's Eye Frozen Chopped Spinach, thawed and pressed dry1/3 cup Reduced Fat Mozzarella Cheese1/8 cup DiGiorno Shredded Three Cheese Blend (Parmesan, Romano & Asiago)1 TBSP Egg Beaters4 oz gold n plump all natural boneless skinless chicken.75 cup Ragu light tomato and basil sauce1/2 tsp Mrs. Dash Tomato Basil Garlic seasoning1/2 tsp Italian seasoning
Directions
Cook chicken and cut into small pieces (or shred)
Preheat oven to 375d
In the bottom of a deep baking/casserole dish, spread a little of the marinara sauce – enough to cover the bottom of the dish.
Cook Lasagna noodles according to package directions.
Meanwhile, combine the seasonings, Spinach, Egg Beaters, Cottage cheese, Three cheese blend, the chicken, and ½ of the Mozzarella Cheese in a large mixing bowl.
Divide the cheese mixture evenly on each Lasagna noodle and roll up. Then place - seam side down - in the baking dish.
Cover with the remaining marinara sauce.
Cover with aluminum foil and bake for 30 minutes.
Remove from oven, uncover, and top with the remaining Mozzarella Cheese. Bake for 5 minutes or until cheese melts.
