6 tablespoons unsalted butter, softened1 cup granulated sugar1 tablespoon baking powder1 teaspoon salt2 large eggs1/4 cup vegetable oil1/2 cup yellow cornmeal1 1/2 cups + 2 tablespoons all purpose flour1 cup milk
Pre heat oven to 350 degrees.
Butter or prepare with spray, an 8 inch square cake pan
In a large mixing bowl, cream together the butter, sugar, salt and baking powder.
Add eggs, one at a time, beating well after each addition.
Add the vegetable oil and corn meal and mix for 30 seconds.
Scrape down the bowl and mix an additional 15 seconds.
Add the flour and mix.
Add the milk and beat until smooth.
Pour into prepared pan and bake for 40-45 minutes, until golden brown and a cake tester inserted into the middle of the corn bread comes out clean.
