Chicken & Baby Bok Choy

Ingredients
5 cups of baby bok choy1 pound eggplant1 bell pepper (any color)1/2 onion1 cup snow pea 1 pound chicken breast3-5 garlic clovesmushrooms (any kind will do but I prefer Ekoni since they look like the rice noodles when the dish is mixed)oyster sauce, fish sauce, and soy sauce to taste (recipe is calculated on 3,1,1 respectively)Prefered spices such as red chilis or chili powder
Directions
Heat skillet over medium heat. Saute onion and bell pepper. Add chicken.

Add any dense veggies such as carrots, eggplant, or large cut broccoli. When almost steamed, add less dense veggies such as bopk choy, snow peas, and mushrooms. Add sauces. Serve with prefered nooodles or rice.
