Oatmeal Cottage Cheese Pancakes

Ingredients
1/2 c dry oatmeal1/2 c cottage cheese (I used 1%)4 egg whites1/2 tsp baking powder1/2 tsp vanilla extract2 tsp Splenda
Directions
Using a blender, blend all ingredients together until mostly smooth (a few lumps are fine and help hold it together). Let batter sit for a couple of minutes to thicken up a bit.

Cook in pan coated with non-stick cooking spray. Make sure to let the first side get done before trying to turn or it will not flip.

Makes about (4) 5 inch pancakes.
