Ricotta Sugar Cookies with Butter Cream Icing

COOKIES1 c. butter, softened2 c. granulated sugar1 carton (1lb) full fat ricotta cheese2 large eggs3 tsp. vanilla extract1/2 tsp. salt1 tsp. baking soda1 tsp. lemon zest4 c. flourICING1 lb. confectioners sugar1/2 c. butter, softened1 tsp. vanilla3-4 TB milkMakes 4 dozen cookies.
Preheat oven to 350 degrees Fahrenheit.
Mix cookie ingredients to form a sticky dough. Drop by teaspoonfuls on an ungreased cookie sheet. Bake 10 minutes or until the bottoms turn golden brown (the tops will stay white). Transfer to wire racks to cool.
To make the icing, cream butter, sugar and vanilla together. Add milk by the TB and mix well until you get the desired consistence. Food coloring may be added to small batches to decorate the cookies.
I found this cookie recipe in a novel, "Summer by the Sea" by Susan Wiggs. It sounded too good not to try. We only make these cookies once a year to give away at Christmas time. They're absolutely delicious and worth the calories!!
