Garlic Almond Parmesean Chicken

- 1 pound Boneless Skinless chicken Breast- 4 servings of Chipotle rub(I used Pampered Chef. You could use salt/pepper/cayenne)- 1/4 cup roasted, unsalted whole almonds- 1 small clove of garlic- 4 tsp Olive Oil- 2 TBsp Grated Parmesean
- Preheat oven to 375 degrees. Sprinkle Chipotle rub on both sides of chicken breasts and place on an aluminum foil lined sheet pan.
- In a food processor, mini-chopper, or blender make a coarse paste of the almonds, garlic, and oil. Top each chicken breast with 1/4 of the mixture, pressing down slightly to adhere.
- Sprinkle the parmesean on top.
- Bake for 20 minutes or until cooked through or internal temperature reaches 165 degrees.
- Serve with your choice of healthy sides.
