Shark Bites

400g Shark (Dogfish, smoothhound etc)0.33 cup of breadcrumbs1 egg yolk200g plain flour, seasoned
1. Skin the fillets of shark (if required). Chop into half inch size bites. There should be enough to make around 24 bites.
2. Roll each piech of shark first in flour, then yolk, then breadcrumbs.
3. Heat the oil in a saucepan till very hot. Shallow fry the bites for about 1 minute each or until golden brown. Serve immediately with tartare sauce and a slice of lemon.
