Persimmon cookies lite

Ingredients
1 cup persimmon pulp (about two very soft)1 cup chopped walnuts1 cup splenda1 cup raisins1/2 cup smart balance2 cup flour1 tsp baking soda(disolved in persimmon pulp)1 egg1/2 tsp cinnamon, cloves & nutmeg
Directions
In large bowl cream smart balance, splenda and egg beaters. In another bowl mix flour, raisins, nuts and spices. Disolve baking soda in persimmon pulp and add to creamed mixture. Add dry ingredients. Mix well. Drop by spoonful onto cookie sheet. Bake 350 10-15 mins. Depends on size of cookie.

I made 40 cookies and baked 12 mins.
