Chicken & Turkey Sausage Gumbo

Ingredients
3 boneless skinless chiken thighs1 package turkey smoked sausage1 onion chopped1/2 bell pepper chopped1 celery talk chopped1/4c. olive oil1/4c. flour
Directions
brown meat in pan over med-high heat season with salt, pepper, red pepper
remove from pan
add oil and flour to pan stir constantly (turn vent on will be very smokey) until roux is the color of a dark penny
add onions, peppers, and celry stir reduce heat
add 4-5 cups water
stir wll
add meat, season gumbo again
return to boil, cover reduce heat to med-low cook for at least one hour (the longer the better!)

serve over rice
