1 whole chicken, boiled deboned and shredded1 pkg Taco Seasoning1 can cream of mushroom soup1 can Rotel tomatoes1 can diced green chiles1/2 can black beans, drained and rinsed1 small bell pepper, chopped1/4 medium onion, choppedTortilla chipsTomatoesBlack OlivesMozzarella Cheese
Mix cream of mushroom soup, rotel tomatoes, green chiles, bell pepper, onion and taco seasoning in large bowl. Add shredded chicken. Set aside a small portion of black beans, layer remainder on bottom of baking dish. Pour chicken mixture onto black beans and layer the top with tortilla chips. Add Mozzarella or cheese or your preference on top, a nice layer to cover the chips and top with remaining black beans, sliced black olives and sliced tomatoes (grape tomatoes work great!) Place in the oven at 350 for 45 min to an hour to let the flavors mix and the chips to crisp up.
