Pistachio Olive Oil Salad Dressing

Ingredients
1 Cup Pistachio nuts with shells (remove Shells-should be about 1/4 cup)1 1/4 cup Olive Oil3/4 cup White Wine Vinegar1 Teaspoon Coarse/Crack Black pepper4 Tablespoons water
Directions
Shell Pistachio nuts and place meat in a small food processor/grinder, run until nuts are finely ground.

In a 2 cup glass measuring cup, combine 1 1/4 cup Olive Oil, 3/4 cup White Wine Vinegar, 1 teaspoon pepper, 4 table spoons water and the nuts, stir well, then pour into a 16 oz container with a lid, refrigerate.

I generally use 2 tablespoons on my Large salads, which doubles the calories, but the Olive oil and pistachio's are good fats for you.

Serving Size: 1 16 oz bottle makes 32 1 Tablespoon Serving
