Baked Tilapia and veggies

One tilapia filet1 1/2 cups of frozen vegetables2 tsp of olive oilsaltGarlic Pepper
Heat Oven to 425 degrees
Lay out a square of aluminum foil. Pour your favorite frozen vegetable mix on the foil. Add salt and garlic pepper, drizzle with 1 teaspoon olive oil.
Place the tilapia on top of the vegetables. Sprinkle with salt and garlic pepper and drizzle with remaining olive oil. Fold up the aluminum foil to make a packet and bake until the fish flakes easily about 25-30 minutes.
Top with low fat parmesan (optional) or a squeeze of lemon.
