Simple Asian Cabbage Coleslaw

Ingredients
cabbage, red fresh, 100 gramsginger root, fresh 5 gramsonions, green 7 grams (~1/2 green onion)soy sauce (low sodium), 1 tbsp mirin (rice wine vinegar), 1 1/2 tsp
Directions
Chop or shred the cabbage.
Mince the fresh ginger and onion.
Combine all ingredients (cabbage, onion, ginger, soy sauce, vinegar), and toss in a bowl.
Refrigerate for at least an hour for the flavors to blend. Even better the next day!
