Oatmeal/Flax Seed/Cottage Cheese Pancakes

Ingredients
1 cup of ground oatmeal1 cup ground flax seed (flax meal)1 teaspoon of baking soda1/8 teaspoon of salt7-8 tablespoons of granular splenda1/2 teaspoon of pumpkin pie spice8 eggs2 cups nonfat cottage cheese2/3 cup of milk2 teaspoons of vanilla
Directions
combine all dry ingredients in bowl. (I grind my own oats). Combine all wet ingredients in blender. Mix dry ingredients with wet ingredients. Pour out into small pancakes on a griddle or in a pan. Flip when bubbly. Eat and enjoy. They have just enough sweetness and spice, so I just eat them plain. You can add applesauce or sugar free syrup for a high protein-low sugar treat.
