Spinach Soup

1-1/2 tsp margarine, soft1-1/2 tbsp olive oil1 large onion, chopped10 oz baby spinach, fresh3 cups low fat vanilla soy milk3 tbsp flour3 cups chicken broth (or vegetable broth)1 tbsp basil2 tbsp soy saucesalt and pepper to taste
Melt margarine with olive oil in soup pot.
Chop onion and add to margarine and olive oil.
Cook until onion is soft.
Add baby spinach and cook for a few minutes.
Add flour to thicken and make roux.
Add soy milk and broth.
Chop basil and add.
Add soy sauce.
Puree in blender or with handmixer.
Bring to boil until heated throughout.
Add salt and pepper to taste.
Makes about 8 servings as a side dish or 6 as a main dish.
Can use regular milk as well.
