Banana Muffins (1 muffin)

Ingredients
Dry ingredients1 cup all purpose flour1 cup whole wheat flour1 cup white sugar1/4 cup flax seed1 tsp baking soda1/2 tsp baking powder˝ tsp saltWet ingredients˝ cup unsweetened applesauce1 egg2 egg whites3 bananas, mashed1 tsp vanilla
Directions
Pre-heat oven to 350° F (180° C). Line 12 muffin tin with paper cups.

Mix dry ingredients together in large bowl. Mix wet ingredients together until smooth. Combine wet and dry mixtures together until just combined. Fill muffin cups. Bake 25 minutes, or until golden and a toothpick comes out clean.

Remove muffins to cake racks to cool.

Makes 16 large muffins
