Moosewood Maple Egg Custard

4 eggs2 1/2 cups 1% milk1/3 cup pure maple syrup1/2 tsp salt1 tsp real vanilla extractdash of cinnamondash of nutmeg
1. preheat oven to 350
2. Beat eggs, then stir in each of the other ingredients slowly, mixing well.
3. put 6 1/2 cup custard dishes in a large, shallow baking dish.
4. pour custard into dishes.
5. pour water in baking dish so that it comes up most of the way of each custard dish.
6. bake 40 - 50 minutes until set.
7. remove from oven and remove individual cups from baking dish, otherwise custard will continue to cook. Let cool and then chill.
